As an intern, Colette lets us sit in and participate in any of the classes she teaches. This past weekend I was able to take her advanced deco class, which was great! Many of the techniques I already know, but its always interesting to learn how others do things, especially Colette. Below are some photos of the 3 tier dummy cake I made. Its 2 sided so I could practice a variety of techniques. It was entirely my design and color choices.
Tickled Pink Ruffles! Super cute technique of the double ruffle. Love how this looks. Fun and sassy. I will use this again for sure.
We also learned to use a crimper, which is a metal tool that pinches the fondant. I really like how subtle and elegant the effect is. And we learned how to do Colette's signature ribbon roses- fun and whimsical.
Topped with a large black and white gum paste bow.
The other side of my cake, I practiced swags and drapes.
